Irish Red Ale

I was surprised when I pitched the yeast there seemed to not be a lot of fermentation activity and after the second day there was only a little foam on the top surface. I let it sit for an additional two weeks, I tested it with a hygrometer and the reading were right. I bottled and let it sit for two more weeks. When ready the taste was good but I was expecting more carbonation. There was little if any. I then read ales do not have a lot of carbonation so I felt better. While it tasted good, I will be trying something with more carbonation. It's just hard to tell in the process if fermentation was occurring or not and to go through a whole month without knowing if it was going to come out right.

I ordered the Irish Red Ale kit as I had long been a fan of George Killions Irish Red I I was no longer to buy it local ( do not know if it is stilled brewed) so I ordered the Irish Red Ale recipe kit from Midwest Supplies. After brewing, fermenting, cold crashing, bottling and refrigerating it, it was time to sample it. Now it is one of my favorite go to beers. Great flavor nearly as I can remember, close to Killions Irish Red. Get you some and I know you will become a fan too
