The kit was simple to use. There was an off taste at bottling. I proceeded with bottling and had the wine sampled. The SO2 levels were high so I drained all the wine back into the carboy and added glass balls so that the wine would reach the neck of the container. I am releasing any pressure daily and will have the wine retested at 30 days. Free SO2 = 51mg/l, Molecular SO2 = 1.7 mg/l and Total SO2 = 171
The wine is spectacular. Took a little sample at bottling and is was smooth with a slight oak flavor. I would highly recommend this wine!
