Clean, highly flocculent, and highly attenuative yeast. This yeast is similar to WLP002 in flavor profile, but is 10% more attenuative. This eliminates the residual sweetness, and makes the yeast well suited for high gravity ales. It is also reaches terminal gravity quickly. 80% attenuation will be reached even with 10% ABV beers.

Although I prefer my meads stronger than what this yeast can produce, the flavor was so nice that I repeated it. The first batch was one gallon that hit a little under 10% ABV after six weeks. The second was a three gallon that took twenty weeks, though it got a little closer to the 10%. It will take a while to go through all three gallons of the second batch, but will make this one again.
