The blackberry, blackcurrant and jammy notes give way to pepper, mint, cedar and black cherry. Dense and dark, with rock-ribbed tannins when young, it will round out to a smooth lustrous finish that goes on forever at its peak.
Sommelier Select™ Old Vine Cabernet Sauvignon includes grapeskins* in the kit. Grapeskins are an excellent addition to wine kits. Not only do they enhance body, mouth-feel and tannin, they also boost color, flavor and aroma. This is because all of the raw ingredients for these things are found in the skin of a red grape. All of our red juices are macerated in our wineries to get the most out of their skins, but adding an extra dose of skin material turns up the volume on the wine's character.

Very delicious wine! Highly recommended! We made once a few months ago and absolutely loved it! Just made it again!
Process simple. Having a cheesecloth bag to hold skins, etc., would have helped during fermentation process. Because skins were suspended in the juice during fermentation process, it impaired the clarifying process and necessitated a number of extra rackings to remove from wine. Hopefully will recover and be tasty. Still waiting for aging process to complete.
5 stars because it appears to be high quality so far. Gripes are that even with a 7 plus gallon vessel in a controlled environment it blew over, I had to rig a tube into a milk jug of water and the grape pack was messy. Currently in a carboy with oak spirals (preference). So far the color is beautiful and it tastes like very fresh wine. If I like and I cannot get to canada for fresh grapes thanks to pandemic I will buy 3 kits, ferment in 4 buckets to avoid blowover and age in a demijohn, a 3 gallon carboy and if enough is left a 1 gallon jug. If they let me I will edit this review 6 months or so after I bottle to reflect how it is once everything comes together
I made this kit in Nov 2017 and am about to order again (30 months old at time of review). As noted in the other reviews, the instructions are not the best and you do need a big fermentor to handle the volume. However, this is a quality kit and makes a really good wine once you let it age. At the 12-18 month mark the wine had good flavor, but was still youngish and a bit rough. At 2 years and beyond this wine is very good to excellent. Big kits with skins require time to bring out the best attributes in the wine just like high quality commercial wines.
If you are a beginning winemaker or are looking for an early drinker, this kit is probably not for you. If you are looking for a stellar Cab Sauv, have some prior experience and have the patience to wait this out . . . it's definitely worth trying.
The kit seems to be a quality product but it is too soon to tell. The lower rating comes from the fact that they supply a “skins” pack but did not supply the required cheese cloth bag. I found out about this in the middle of my start. A small item but a big irritation.
