Product Details

The oldest vines (between 60 and 80 years) produce fruit unlike any other. This Cabernet Sauvignon has stupefying levels of fruit and extract.

The blackberry, blackcurrant and jammy notes give way to pepper, mint, cedar and black cherry. Dense and dark, with rock-ribbed tannins when young, it will round out to a smooth lustrous finish that goes on forever at its peak.

Sommelier Select™ Old Vine Cabernet Sauvignon includes grapeskins* in the kit. Grapeskins are an excellent addition to wine kits. Not only do they enhance body, mouth-feel and tannin, they also boost color, flavor and aroma. This is because all of the raw ingredients for these things are found in the skin of a red grape. All of our red juices are macerated in our wineries to get the most out of their skins, but adding an extra dose of skin material turns up the volume on the wine's character.

Yield: 6 Gallons

*This recipe kit uses a RealGrape pack to boost flavor and body. Because the grape skins are not dried, they take up more space in your fermentor. This recipe requires the larger 7.9 gallon wine fermentor.

Age for a yr & it's great thanks

We just tested and bottled our batch of Sommelier Select cabernet. We drink a lot of cabernet and are tired of paying the ridiculous store prices so thought we'd try this since it was deeply discounted. We are pleasantly surprised with the depth of flavor the young wine has. We intend to let it rest in our root cellar for at least 20 months before we delve into it and we plan to order more do-it-yourself wine kits so as to have enough wine on hand to get us through the next zombie apocalypse. The instructions are easy to understand and follow for this higher end kit; specifically, we chose this kit because it included grape skins and we are prepared to deal with them because we have all the fermenting buckets and apparatus since we also are home brewers.
