Italian Nebbiolo wine review

It's a little too early to submit a review because the wine is still clearing. Once it clears and I've filtered it, I'll give it a taste test. However, nebbiolo grapes are notorious for needing extended period of time to age. Ask me again in a couple of years...

Great kit for a tough wine

This is not the same as a 7 year old Italian Nebbiolo that spent its first 3 years of life in oak and takes your breath away just by looking at it. It's far more friendly and drinkable, but it's definitely still Nebbiolo. Everything you need is in the kit and the instructions were good but the printed instructions do not say to add more sulfite if you plan to store the bottled wine long term. It's in the on-line instructions but was not in my kit's instructions. Nebbiolo is typically brutally HIGH in tannins and sharp acid (pH 3.0 - 3.2), which this kit is not, so don't expect it. It's made to be drinkable soon after bottling. However, I did find that you can up the oak/tannins and drop the pH to 3.1 (at least for MY tastes), moving the wine significantly closer to a traditional Nebbiolo without overwhelming the flavors and bouquet, so it's got a good bit of wiggle room to adjust it to your liking. I'd definitely recommend this but maybe more for an experience wine maker. Straight from the kit it's a good early drinker and will age well, but I think it needs some tweaking to get it into the same ballpark as a $30/40 bottle of traditional Nebbiolo.
