Full-bodied and dry, with farm fresh raspberries, bright red cherry and blackberry fruit, licorice, and spice complemented by zesty acidity, and a long, generous finish, rounded out with black pepper, vanilla and sweet oak.
Acidity makes this a natural with tomato sauces and tannin tackles any rich or unctuous food. Try it with Tuscan style pork roast, lamb shanks braised in herbed tomato sauce, or a wild mushroom lasagne.

I bottled yesterday after starting about 6 weeks ago. It tasted great!! This is a rich, full bodied, deep red wine, as advertised. I highly recommend it and would buy it again.
It is now in its balk aging stage a sample thus far tells me it’s going to be among the best wine that I’ve made. I like to balk age my wine several months in its 6 gallon carboys
We followed the instructions to the letter and at the end have a clear red wine at about 14%. However it still seems a bit too sweet. The OG was 1.100 and the FG was 0.997. We’ve decided to let it bottle mature for at latest 6 months and retry it. I plan to update this review at that time.
Simply the best red Italian wine I have made and enjoyed. On my 5th batch and it never disappoints. Guests and gift recipients give it 5 stars.
