I bottled this wine New Years Day. I opened a bottle up this weekend (weekend before Memorial Day) to see how it's aging... Just lovely! I'm sure this will be a hit for the holidays. Yes, it is sweet like a port and it has a nice port flavor at first, then it follows with a possibly leather finish which I presume will become more mild as it ages. I'm ordering more.
An easily adaptable dessert wine. The last few batches I fortified using brandy toward the end of the fermentation cycle and had to clarify it a few times. I'll start toying with different wood profiles, but also good as is.

I have used this Port kit several times, the key is time. After fermintation, I rest the port in the carboy for 90days, Clarifying at least twiceand also adding heavy toast American oak. I then bottle and let the port btl age for 3yrs
