Haven’t used this yeast yet. I use champagne yeast when I brew high ABV beers. After several days in primary with the beer’s appropriate yeast (which cannot tolerate the high alcohol content), I rehydrate a packet of champagne yeast and add it to the wort to finish the fermentation.
Was hoping for bayanus yeast, but the cerevasiae yeast works pretty well too. Good yeast,great service, as usual. Really like doing business with Midwest.

Just used this yeast in a ten gallon elderberry wine. In fermented fast and complete. I've used it before with great results.
Works great very fast and aggressive doesn't seam to matter how high the sugar content is it always works
