These medium toast, french oak infusion spirals added a great flavor. I think it added some sweetness to the flavor and we did not have to back sweeten with the wine conditioner. Luckily I read on a winemaking forum that they impart most of their flavor quickly. I was testing this oak in a one gallon batch of a burgundy-style wine and decided to pull it after only two days. By my taste I had already gone a tiny bit too far. However, the oak has been integrating with the wine and is showing quite nicely. Make sure to check on the progress often in order to get to the level that you want. On that note I have also read that when using these alternative oak products that if the wine seems to have a little too much oak at the time that you remove it, then the wine will probably be exactly where you want it to be after it finishes aging.December 29, 2012Nice Oak flavorGreat Oak flavor, just don't leave it in too long because it has a lot of surface area and will impart a lot of oak flavor. Depending on your wine 6 weeks may be long enough, you may want to taste earlier.
