Luckily I read on a winemaking forum that they impart most of their flavor quickly. I was testing this oak in a one gallon batch of a burgundy-style wine and decided to pull it after only two days. By my taste I had already gone a tiny bit too far. However, the oak has been integrating with the wine and is showing quite nicely. Make sure to check on the progress often in order to get to the level that you want. On that note I have also read that when using these alternative oak products that if the wine seems to have a little too much oak at the time that you remove it, then the wine will probably be exactly where you want it to be after it finishes aging.December 29, 2012Vanilla OakAdds a nice vanilla oak taste top wine. This is nicer tasting than the chips I tried. These medium toast, french oak infusion spirals added a great flavor. I think it added some sweetness to the flavor and we did not have to back sweeten with the wine conditioner.
