4 months agoThis one is not the best.I have had many kits before including this one. All kits in the past 12 yearshave been great. This time the kit seems to be full of gas. It has fermented for over a month and shows a lot of bubbles when I rack it or stir it. I would still recommend these kits because one off kit does not make representation all of them.April 3, 2019Purchased
7 months agoGood Start!Fermented 2 identical kits together @ 66 degrees. I did some slight modifications after initial measurements, adding additional tartaric as I thought it was a bit low, also a bit of sugar, and a portion of Am Oak spiral in primary. Fermentation energy was good, so only used half the yeast energizer. Maybe should have used it all, as it developed a bit H2S odor, I managed with frequent splash stirring and some copper water pipe. Currently settling out the lees prior to bottling. Taste/mouthfeel is very nice - but I hope it will develop more bouquet after bottling and 6 months of age.
