Acid Blend is used in wines to help balance the three main acids in a wine. By balancing the acidity, it makes it easier for the yeast to ferment properly. Acid blend is made up of Malic Acid, Citric Acid, and Tartaric Acid.

A good way to adjust pH and get a good blend of acids so your wine avoids harshness. Its a more well rounded acidity, and will improve certain wines.
Its a good blend, and easy enough to measure. I don't add it all at ounce, I add, and taste and repeat until its just right. _x000D_If I had to measure fractions of a gram of three acids myself it would be a pain in the neck and I doubt I'd be accurate enough.
I add the acid at bottling time. Depending on whats in the Mead I vary the amount I use. I take 4 ounces and a scientific scale and measure out powder in Centigrams and mix it in till I'm satisfied with the taste. Start small with a sample, then scale up. Don't be afraid to under use the acid. Next time you can add more, but you can't take it out, unless you start adding more chemicals.
