A true top cropping yeast similar to Alt strains. Produces slightly more fruity/winey characteristics. Fruitiness increases with temperature increase. Low or no detectable diacetyl production. Also ferments well at cold 55 - 60 F range (13-16 C). Used to produce quick-conditioning pseudo-lager beers. Requires filtration or additional settling time to produce bright beers. 56-70 F.

Probably the best Kolsch I have brewed. Closest to the German Kolsch I can find.
The yeast does its job and help create fantastic beer. This is my second batch - we liked it that much! That being said you should definitely have the Wyeast shipped overnight or next day. Mine Wyeast arrived HOT even though it was shipped with cooler pack. So far it seems to be doing it's job but if you are worried about keeping it cool for shipping, faster is better.
I just bottled the Koshch, yet I'm asked to give a review. Well - it was quite fun to brew, ferment and bottle. Haven't had a chance to try it, but I got my obligatory email to review it. Brewer beware!
Great product. Fermented at 65 degrees and after 3 weeks it was good to go.
I've only had Kölsch in Germany a few times, so I wouldn't feel totally confident, saying how much this replicates the original, but it is definitely a very tasty, refreshing beer, which is what Kölsch is supposed to be.
