Just used this yeast in a ten gallon elderberry wine. In fermented fast and complete. I've used it before with great results.
Works great very fast and aggressive doesn't seam to matter how high the sugar content is it always works
EC-1118 is a *nightmare* yeast. I love it. It does not care. Other yeasts need perfect conditions, lovingly balanced fermenting mediums. EC-1118 will brew up in super acidic overly sweet puddles in a 45 F fridge. It does not need feeding. It does not need conditioning. It knows no mercy, and fears no temperatures. Give it enough sugar, and it'll brew up to 18% alcohol. Add water to thin that out, and *it will come back and keep brewing*. The only problems I've had with it are getting it to *stop*.B
I’ve been brewing mead for about two years. I always use Lalvin because the results are successful. I started by adding energizer, but I have found it not necessary. Never had a brew that did not ferment properly.
