We made this kit into a sparkling wine (left out the stabilizers, kegged once clear) and it was fantastic! We've made sparkling wine with other kits before as well (nothing oaky or with an F-pac), but this one came out the best. Will definitely do again!
I started this kit 2 weeks after I started my first kit (Riesling). Both kits converged at the second fermentation stage, so I was working two kits in parallel. This kit had everything I needed. Since I already brewed my own beer and I keg since I don't like to fool with bottles, I decided to try my hand at wine making. I had all the hardware (bubblers, carboys, etc.) and decided to keg the wine and store in my kegerator. I followed the instructions (almost) to the letter, never proceeding until the hydrometer readings were achieved. Kegging was a bit more challenge, as the wine is more viscous than ale, porter or lager. I had to purchase portable spigots that had tight seals to prevent leakage (I lost 1/2 gallon due to poor seal on my plunger tap). I confess that I did not pay strict attention to the second stage fermentation instructions and did not add the oak chips until later. My remedy was to extend the secondary phase to give the chips a chance to make their contribution. I am happy with the result and my wife even likes the flavor of the wine. All in all a good experience. I would recommend.
used this juice a lot...even started splitting the batch and oaking it! Always crystal clear and delicious!
Just bottled this past weekend. Already tastes delicious. I’m relatively new at home making wine from juice kits. This is my 2nd batch of this wine and so far the best tasting homemade wine I’ve made. I would serve this to guests.
