I have had good luck with getting this yeast to start and completing the fermentation. I know the package calls out for rehydration, but I make sure my must is good with sugar levels, acid, nutrients and etc. I take the temp of the must as well and if it isn't between 70-75 degrees, I amend it until it is. If it's below that temp, I warm it. Above that temp, I cool it. Simple. I pitch the yeast on top of the juice, avoiding a fruit bag as much as possible and usually within 12 hours I have a robust fermentation. I Usually do fruits of different types to make different wines and when in doubt I use this yeast. I use a bag to contain the fruit and after primary fermentation I'll mix up honey to make a mead and put the fruit bag into it for a week or so and it takes off strong, the best way I have found to get mead to robustly ferment. And I end up using only one packet of yeast that way. My tasters tell me it's the best mead they have drank. Use good hygiene to make your wine and a good product like this and you'll be enjoying an glass before you know it, now get going, times a wasting that would be better used on your wine.
