Pitched two packs of this yeast into 5 gallons of the Midwest’s farmhouse ale ~11%abv. This yeast worked very well. It was still going after two weeks in a high gravity wort. The flavor of the beer came out a little fruity (maybe by design). But I did stop controlling the temp after about 5 days when I assumed most of the fermentation was done. I’m thinking if I had kept the temp lower (maybe 66 F) for the whole two weeks it would have brewed less fruity. But all that said, I highly recommend this yeast. I’ll be using again for higher gravity applications.
