Intense wheat flavor
Used in a witbiers it gives an intense wheat flavor. It also makes my beer hazy which no amount of cold crashing or fining will remove. For my witbiers it composes around a quarter of the total grain amount used.

Can this be used during the steeping process in an extract recipe?

BEST ANSWER: Yes, you can. But you do not want to use a lot. To use more than maybe 1/2 pound you would need to do a mash with base malt.
