Recommended for Cabernet, Cider, Dry Whites, Fruits, Meads, Port, and sodas. Despite the name, this yeast SHOULD NOT be used in sparkling wines. It eats through everything, giving a dry apple flavored cider.March 23, 2014Makes a very dry MeadI made a higher alcohol Mead (18 pounds because I had some left over honey). These yeast ate it all and still wanted more. I gave them some DAP when pitching and degassed in the beginning. After 6 weeks I racked to a better bottle where it's been aging for 5 months.
