Dry Cider
When I want to make a high alcohol hard cider, this is my stand by yeast. It eats through everything, giving a dry apple flavored cider.

Makes a very dry Mead
I made a higher alcohol Mead (18 pounds because I had some left over honey). These yeast ate it all and still wanted more. I gave them some DAP when pitching and degassed in the beginning. After 6 weeks I racked to a better bottle where it's been aging for 5 months. I tasted some when I racked and have high hopes.

Good for finishing strong beers
I've used this several times in high-gravity beers that have "stuck" at lower attenuation than I wanted. It is also good for ensuring healthy yeast prior to bottle-conditioning a big beer. Clean, neutral flavor, except for a slight sulfur bite that fades with aging.

Versatile yeast
We have used this yeast with a rhubarb wine and apple cider and the final products were fantastic. This was active in the starter within a couple of hours and was really bubbling in the cider! Will definitely buy this again.

Multi-purpose yeast
Beyond Champagne making its good for:_x000D__x000D_1 - Soda making_x000D_2 - Mead Making_x000D_3 - Cider Making_x000D__x000D_and if you dare - you can try it in a stuck fermentation, though it will come out very dry.
