One of the six original players in Bordeaux wines, Malbec is definitely the burliest, with inky dark color, robust tannins and rich, juicy plum-like flavors. These are backed up by blackberry and black cherry aromas, while an undercurrent of leather and gamey-earthy notes flirts with pepper and tobacco to draw out the finish.
South Americans know Malbec's strength, and they serve it with spicy grilled meat of all kinds--lamb, venison, beef and pork--but it works equally well with robust spicy foods, especially Mexican Mole.
