Then I add 8-12 ounces of Melanoidin malt to add aroma, color, body and flavor. It's strong so don't go adding more than a pound unless you know what to expect.January 19, 2014Fabulous in lagersI use a half pount of this Melanoidin instead of perfoming a decoction mash. Browse 1 question Browse 1 question and 5 answersCan this be steeped or does it require a mash?BEST ANSWER: I assume you are not doing an all grain bill but are mostly brewing with LME or DME. If so and if you just want the beautiful red tinge that Melanoidin adds go ahead and steep. But if you want want the contribution towards smooth mouth feel, compact head retention and more alcohol, you'll crush and mash. ~ Crownie
