Fabulous in lagers
I use a half pount of this Melanoidin instead of perfoming a decoction mash. It adds a fabulous aroma and the taste is what I was expecting. It darkens the beer a little too.

Augments lagers with extra aroma and color
Sometimes I do a decoction mash when I make lagers but usually not. Then I add 8-12 ounces of Melanoidin malt to add aroma, color, body and flavor. It's strong so don't go adding more than a pound unless you know what to expect.

Can this be steeped or does it require a mash?

BEST ANSWER: I've always mashed with with it but I'd imagine you could steep with it just like any other specialty grain. This is one of my favorites for adding mouthfeel and a slight biscuit malt flavor. Enjoy!
