Dead Ringer is a nod of the cap to the stalwart IPA of the upper Midwest. This devilishly simple recipe flaunts clean American base malt flavors, muted notes of caramel and then brazenly boasts the classic flavors of Centennial hops. Hell's Heart cascades into the glass with a fiery orange hue while releasing relentless wafts of dominant citrus tones of grapefruit, and then opens up into an abyss of inescapable bitterness and beastly citrus flavor.

Brewing Notes:

  • Style: American IPA
  • Fermentation Range: 65-70°F
  • Original Gravity: 1.064

Tasting Notes:

  • Aroma: Moderate malt aroma consisting of fresh bread and medium sweet caramel. Medium-high hop presence of citrus and floral notes.
  • Appearance: Orange hue with a bright white persistent foam cap. Slightly cloudy from dry hopping.
  • Flavor: Rich maltiness with a moderate caramel flavor. Medium-high bitterness with citrus, floral, and slightly earthy notes.
  • Mouthfeel: Medium body with moderate creaminess and medium carbonation leaving a smooth finish.

"Dead Ringer is our way of paying tribute to one of the most iconic IPAs in America. In the upper Midwest (and many other parts of the country), this beer is a mainstay of aficionados. A simple malt bill and hearty doses of Centennial creates magic with only 2 malts and 1 hop variety. The resulting product is awash in hop aroma, while not overpowering the malt component. Aromas of citrus fruits and floral notes dominate, while the rich malt character in the background offers a perfectly balanced pint.

This recipe does come with a relatively high gravity, so be sure to pitch enough yeast to ensure fermentation health. One pack of Omega or Imperial should do the trick, but to be sure, a yeast starter or multiple packs of yeast is recommended. Try to keep the temperature in the lower range of recommendations (65°F is perfect!) to ensure that your batch has the cleanest possible flavor without producing too many esters. When finished and carbonated, share with another and there will be two hearts with ample joy!"

Dead Ringer to double IPA.

When I brewed this beer, I used all of my Centennial hops in the boil, but purchased 2 ozs. of your Minnesota Axe hops to dry hop with a week before bottling. If you are a hop head like myself, this Double IPA is just plain amazing.

Dead Ringer Extract

I used Wyeast and did a yeast starter. I had bought a pound of DME for the starter of this and another kit and added the remaining DME along with the final LME during the boil, so the gravity was higher at 1.069. Finished gravity was 1.014, and the beer turned out great. It tastes just as described.

great kit, clogged kegerator lines

This is totally my fault, but I should have let the solids drop more and racked a few more times. the solids clogged my kegerator lines, fought with it for a while until I emptied the keg back into my fermentor bucket and found a lot of stuff settled on the bottom. next time I will make sure and rack an extra time. other than that it's very good now that I can get it out my tap, will definitely order again.
