Italian Sangiovese Wine Kit - Master Vintner®

The Sangiovese has a lovely deep ruby red color. It initially tasted flat, but already smoother and more grape. Fruity aroma after 2 weeks in the bottle. Hope it will continue to mature with time. The kit was easy to use, place for yeast nutrient is new and more clarification of the rational for various additions would make the journey more interesting.

Sangiovese

No problem with the flavors, however I have done several kits now that were bottled in the time frame that the directions suggest and they all have too much co2 (even after de-gassing for long periods). Over time this will dissipate in the bottle (likely 1 1/2 to 2 years) but this makes them less drinkable at an earlier stage. Now that I have made additional kits and wines with fresh/frozen grapes, I would suggest leaving the wine to age in a carboy for at least 3/4 months after fermentation to let the wine fully de-gas
