Have been using Safale 05 for all previous brews and always felt it imparted a flavor profile that competed with malt and hops in a way that didn't contribute to a balanced and enhanced final product. Nottingham allowed the pilsner light extract to display great malt flavor and hop profile bitterness,flavor, and subtle aroma, Great drinkable brew using the most basic ingredients, Looking forward to trying it on my next wheat batch
Very active strain when fresh! I've innoculated a three gallon batch with less than the recommended amount (1 tsp of 11 gm pack)...12 hours later - very respectable activity. Yielded nice floral/banana notes to during fermentation. Didn't exactly drop bright after cold crashing but was not expecting it as it was a wheat beer. Nice alcohol tolerance (OG of 1.080 and FG of 1.016)!Still active enough 2 weeks after bottling to assist with secondary fermentation/carbonation in bottle. Could'nt be happier with yeast strain. Will definitely order again!
I split the yeast between two batches. The first I pitched dry and fermentation picked up albeit slowly. It is still fermenting steadily. The second batch I re-hydrated the yeast, and fermentation began within 24 hours.
I always have this and us-05 on hand, clean ferments, one of the best dry yeasts.
If someone were to tell me that I could only use one yeast the rest of my life, this would be it. 100% reliable starter. Clean, neutral fermentation. I have used it up to 13.5% ABV with only one packet in 5 gallons. Guaranteed success with this one.
