Wyeast 4783 Sweet White Wine Yeast

I have used this wine to make Rieslings several times. I have tried other recommendations such as Steinberg and Prise de Mousse as well as the basic 1116 and 1118. None of the other strains match WY4783 when fermented cold. You need to be able to ferment this at lager temperatures to create a proper Riesling as higher temperatures will blow off some of the delicate flavors and aromas that make a Riesling a Riesling.

I used this yeast for a strawberry wine. The yeast withstood high alcohol content and I was very happy with it.

The yeast was no good, everything was done correct on my end but the yeast was not fresh it even smelled bad !!!
