Outstanding kit that tastes incredible even without aging
Just finished primary fermentation. Added the oak cubes to carboy but waiting to add clarifiers and k+ metabisulfite and sorbate to allow maximal oak extraction. Tastes good even after racking off of primary fermenter. Definitely need the large bucket to accommodate the grape skins. Will review final product when done.
This is by far 1 of my favorites wines. I made my first batch about 15 years ago. This wine is OK after 8 weeks but needs to age at least a year. The best bottle from the first batch aged 10 yrs and was absolutely the best bottle of wine I have ever drank. I am now on my 5 batch and will definitely do more.
Pleased with MidWest administration and delivery. Not too pleased with the Eclipse instructions which failed to discuss the grape skins. Fortunately I have done enough other kits that did have instructions to refresh my memory. First indications are this will be a very good wine.
